As I'm compiling these recipes from my mother-in-law's cookbook, her two sons are with me (one of those is my husband!). I asked them if they remembered this recipe and got a resounding 'YES'. They said that Helen, their mother, added the bourbon to their grandmother's recipe, who would have never considered such a thing. These are delish!

  • 4 medium size YAMS or SWEET POTATOES, peeled and cut into 1-inch cubes
  • 4 Tablespoons  BUTTER, melted
  • 4 Tablespoons  BROWN SUGAR
  • 4 Tablespoons  ORANGE JUICE
  • 4 Tablespoons  BOURBON
  • 1/3 teaspoon each  ground CINNAMON, ground CLOVES & ground NUTMEG
  • 1/2 cup  chopped PECANS, toasted

Recipe Info

  1. 1. Heat oven to 350°F. Spray a 3-4 quart baking dish with non-stick cooking spray and set aside. Place the cubed sweet potatoes in a microwave safe baking dish, add 2 Tablespoons water and cover with plastic wrap. Microwave the sweet potatoes for 6-8 minutes or until almost fork tender.
  3. 2. Combine the melted butter, brown sugar, orange juice, bourbon and spices in a small sauce pan and heat for 2 minutes over medium heat.

  4. 3. Arrange the cooked sweet potatoes in the prepared baking dish, pour the spiced butter sauce over the potatoes and sprinkle with the toasted pecans. You can cover with plastic wrap and refrigerate for 1-2 days until ready to bake. Or, bake the sweet potatoes for 15-20 minutes.
