Helen, the new Greek spot in Rice Village, is all the buzz right now--and it's all good! The setting is cozy and inviting and the food fantastic. One of dishes I fell for is their Feta Brined Chicken. I've had it prepared with wings or with tenderized breasts--either way, it's wonderful. I asked for the recipe and it's surprisingly simple. Enjoy!


  • 1 cup feta brine
  • 1/2 scallion  chopped
  • 1  bay leaf
  • 2 teaspoons picked oregano
  • 1/4 cup pepperoncini brine
  • 1  sliced pepperoncini
  • 2 tablespoons EVOO

  1. In a ziplock bag combine ingredients. Allow chicken to marinate for 24 hours and grill. We serve ours over crispy lemon confit potatoes with a dollop of avgolemono and some of the feta brine, but any sides desired that compliment the chicken should work just fine.

  2. The avgolemono sauce is version of a lemon cream sauce that you can source online made with egg yolk and lemon juice.
