Holiday Squash Casserole

I'll wager this will be your favorite holiday side--it is mine. The combination of the fresh squash, the onions and the cheese is delish, and the addition of the eggs makes this dish feel more like a soufflé. Truly one of my favorite holiday dishes.


  • 4  medium size YELLOW SQUASH, sliced
  • 4  medium size ZUCCHINI SQUASH, sliced
  • ¼ cup  melted BUTTER
  • 1  large SWEET YELLOW ONION, chopped
  • 2 stalks CELERY, chopped
  • ½  RED or GREEN BELL PEPPER, chopped
  • 2  large WHOLE EGGS, beaten
    2 cups  HALF & HALF
  • 1 ½ cups  grated CHEDDAR CHEESE

  1. 1. Heat oven to 350°F. Spray a 3-4 quart baking dish with non-stick spray and set aside.

  2. 2. Place the squash in a large microwave safe dish, cover and add ¼ cup water. Microwave the squash for 8-10 minutes or until tender. Drain the squash, mash and set aside.
  4. 3. While the squash is cooking, heat a heavy bottom skillet over medium heat for 2 minutes. Add the melted butter, onions, celery and peppers.  Stir-fry the onion mixture for 5 minutes or until tender.

  5. 4. Add the onion mixture, beaten eggs, half and half and cheese to the mashed squash. Season the mixture to taste with salt and fresh cracked pepper. Pour the squash mixture into the prepared baking dish and top with the cracker crumbs. You can cover with plastic wrap and refrigerate until ready to bake up to 1 day ahead. Bake on the center oven rack for 45 to 60 minutes. Serve hot.
