Jack Allen's Kitchen Heirloom Caprese Salad

When we get lucky, heirloom tomatoes can be just the thing that's missing from a good salad. Cut the tomatoes and add good olive oil, herbs, and some good goat cheese. Try serving in mason jars for portion control... très cute! Watch this dish being created HERE!


  • 1 lb  Heirloom Tomatoes, multiple colors, sliced and randomly cut
  • 4 tablespoons  Red Onion, chopped
  • 16 Basil Leaves
  • 3/4 cup  Olive Oil
  • 1/4 cup  Champagne Vinegar
  • Salt and Pepper to Taste
  • 8 ounces  Fresh Goat Cheese, crumbled

  1. Place one layer of tomatoes in 8-ounce mason jars. Place 1 tablespoon of onion on top of tomatoes and continue layers in alternating colors to fill jars. Place 4 basil leaves on top of tomatoes in each jar. Mix in vinegar/olive oil, and fill each jar to top. Sprinkle seasoning on top and seal jars tightly. Refrigerate until ready to use, no more than 2 hours. Divide cheese crumbles onto 4 plates evenly. Shake mason jars to combine ingredients and pour 1 jar onto goat cheese on each plate.
