Inspired by the tanginess of blood oranges, this light salad has a sparkly personality. Its vibrant colors engage the heart chakra and stimulate a LOVE sensation. Plus it’s alkalizing and rich in vitamin C. From the kitchen of Diana Stobo.

Ingredients

Love Salad Ingredients:

  • 1–2 heads butter lettuce, torn into bite-sized pieces
  • 3 blood oranges, peeled and sliced
  • 1 red pepper, diced
  • 2 ears corn, kernels removed

Dressing Ingredients:

  • ½ cup blood orange juice, freshly squeezed
  • ½ cup olive oil
  • 1 teaspoon raw honey
  • 1 tablespoon apple cider vinegar
  • ½ teaspoon sea salt
  • Pepper to taste

Recipe Info

Toss the chopped lettuce, oranges, red pepper, and corn kernels in a bowl. Place all dressing ingredients in the blender and blend on high for 30 seconds to emulsify. Pour dressing over the salad and enjoy.
