Peli Peli Homemade South African Sausage & Tomato Sauce

Ingredients

Tomato Gravy:
  • 4 Tomatoes
  • 1 Onion
  • 1/2 Green Pepper
  • 1 teaspoon of brown sugar
  • 1 Pinch salt & pepper - to taste
  • 1 Green chili
  • 1 teaspoon pureed garlic
  • 1 teaspoon vegetable oil

BOEREWORS (South African Sausage):
  • 2 kg chuck beef (fat and gristle removed)
  • 200 g beef fat
  • 1 tablespoon ground coriander
  • 2 tablespoons salt
  • A pinch nutmeg
  • ½ cup vinegar
  • 90 g pork casings

Tomato Gravy:

  1. Grate tomatoes with a cheese grater. Do not add the flesh. Slice the onion and dice the green pepper. Chop the chili. Remember to discard the stem and the tip. Braise onion in pot using vegetable oil. Add green pepper. Maintain medium heat. Add grated tomatoes to the onion and pepper.

  2. Add garlic, salt, pepper, sugar and chili. Stir over heat. Let the mixture come to a light boil, then turn the heat down to let it simmer. The gravy should thicken slightly. Remove from heat and serve with the boerewors!

Boerewors:

  1. Cut the meat and fat into small cubes. Sprinkle the seasoning over the meat (not the vinegar), mix well and then mince together. Add the vinegar and mix lightly, but thoroughly. Stuff into casing and refrigerate for 24 hours in a covered, non-metal container. For a curry flavor, add a tablespoon of curry powder to the recipe. For a great garlic flavor, add finely crushed and chopped garlic.

  2. Do not overcook the sausage. About 12-15 minutes over slow coals should do well.
