Poached Salmon with Candied Oranges

  • 2 tablespoons olive oil
  • 1 tablespoon butter
  • 1 large shallot, finely chopped
  • 2 teaspoons lemon juice
  • 3 tablespoons fresh thyme, plus more for garnish
  • 1 1/2 pounds salmon fillets
  • Taste Elevated Candied Oranges, for garnish

Recipe Info

  1. In a large straight sided pan, heat olive oil and butter over medium heat. Add shallots and sauté until soft; 1 to 2 minutes. Add lemon juice and 2 tablespoons of thyme to the pan. Bring to a boil and reduce heat to a bare simmer. Season salmon filets with kosher salt, pepper, garlic and 1 tablespoon fresh thyme. Slide fillets into liquid, cover and poach 3 to 4 minutes or until done. Place Salmon on serving platter and garnish with Taste Elevated candied oranges. Enjoy!
