  • 15 oz all-purpose flour

  • 15 oz sugar (reserve 6 oz.)

  • 5 t baking powder

  • ½ t salt

  • ½  lb butter

  • 10 oz milk

  • 56 oz sliced peaches, drained

  • 6 oz sugar (reserved)

  • cinnamon

Equipment: Saucepan, rice basket (strainer), bucket, sifter, full pan (approx 16 x 11 x 3), measuring cups, measuring spoons

  1. Melt butter in saucepan over low heat. Sift together flour, sugar, baking powder and salt. Whisk milk into dry ingredient mix until smooth. Pour melted butter into full pan to cover bottom of pan. Pour batter over butter to cover pan evenly.  Don’t mix batter with butter just pour on top of. Layer peaches evenly on top of batter without mixing Evenly sprinkle reserved 6 oz sugar over top of peaches. Lightly sprinkle cinnamon over sugar. Cook uncovered at 350 degrees for 1hr 20min. ROTATE PAN AT LEAST ONCE DURING COOKING. Remove from oven and let set up at room temp for at least one hour.
