This is the BEST potato salad from my dear friends at Zinc Bistro & Wine Bar...it's served with the most delicious short rib sandwich I'ver ever tasted! Enjoy!


  • 3 pounds  Yukon Gold Potatoes
  • 6-8 slices  Applewood Smoked Bacon
  • 2  Green Onions
  • 1⁄2  Medium Red Onion
  • 2 Tblsp  Fresh Parsley, chopped
  • 1 Tblsp  Dijon Mustard
  • 2 Tblsp  White Wine Vinegar
  • 1 Tblsp  Olive Oil
  • 1 tsp  Garlic Powder
  • 1 dash  Sugar
  • Salt & Pepper (to taste)

Recipe Info

  1. Place Yukon Gold potatoes into salted water and boil until slightly firm. Place potatoes directly in cold water bath. Chop potatoes and set aside. Cook bacon in pan reserving bacon renderings. Chop bacon and add with green onions, red onions and parsley to potatoes. Whisk bacon renderings with Dijon mustard, white wine vinegar, olive oil, garlic powder, and sugar. Toss potato mixture with liquid mixture.

  2. Garnish with fresh parsley and serve warm.
