From my friends at H-E-B Cooking Connection. Mama Tang is made from a delightful family in Houston. And that's exactly what this warm, quick-fried veggie salad is - delightful!
1 large carrot, peeled & shredded
1 small super sweet onion, finely sliced
½ English cucumber, halved & then sliced
8 slices pickled ginger (Sushi gari), chopped
2 Tbsp. Ottabio Extra Virgin Olive Oil
½ cup Mama Tang Marinade – sweet or spicy
2-4 Tbsp. Adam’s Reserve Asian Spice rub
Salt and pepper to taste
2 Tbsp. each Sriracha Sauce and honey
Juice 1 fresh lime
Heat the oil in a dutch oven or heavy bottomed pan over HI heat, and quickly stir fry the carrot and onion for about 1-2 minutes. Add the cucumber and stir fry for 10 seconds. Add Mama Tang, stir, and remove from heat. Adjust seasonings with salt and pepper to taste. Plate salad on a serving platter, and sprinkle with chopped pickled ginger and Asian Spice rub. Drizzle with Sriracha mixture and serve.
