When I stayed at the Mondavi’s recently, Rob and Lydia took Mike and I to lunch at their Folio Enoteca in the public market in Napa called the Oxbow. The food was fabulous! I’ll never forget the delicious tomato salad. I asked Rob if I could share the recipe with you, and always the nice guy… he said yes. Enjoy!
Red Wine Vinaigrette
Mix all ingredients in a bowl.
Panzanella
Grilled 2 slices of baguette and cut in small pieces. Toss with red wine vinaigrette until soft meanwhile cut red onion and cucumber into slices. Cut tomato in chunks. Break 3 leaves of basil and mix with bread. Salt & Pepper to taste.

Red Wine Vinaigrette
- 4 c Olive oil
- 1 c Red wine vinegar
- 1/2 c Lemon juice
- 1 T Lemon zest, chopped
- 1 T Shallots, finely diced
- 1 T Salt|
- 1 t Pepper
Panzanella
- Tomatoes
- Red onions
- Cucumber
- Baguette, chunked
- Basil
- Red wine vinaigrette
