
Terra's Kitchen Mediterranean Mezze Salad
This light and healthy meal is perfect with freshly baked pita bread. Our friends at Terra's Kitchen show you how to make it with a tangy hummus dressing.
Ingredients
- 2.5 ounces green leaf lettuce
- 3 ounces English cucumber
- 6.5 ounces mixed cherry tomatoes
- 0.75 ounce Kalamata olives
- 8.5 ounces hummus
- multigrain pita chips with veggies
- .6 ounce Red Wine Vinegar
- 6 ounces chickpeas
Instructions
- Chop lettuce.
- Halve olives.
- Halve tomatoes and slice cucumbers.
- Make Dressing: Whisk 1/4 cup hummus with ONLY 1 tablespoon red wine vinegar and1/2 tablespoon water in a small bowl. Salt and pepper to taste.
- To serve, arrange ingredients on a serving platter. Drizzle with dressing.
