Zinc Bistro's Bourbon Marinated Sirloin Skewers with Blue Cheese Fondue
This sirloin skewer recipe will skew you toward two of fall's favorite things: butternut squash and bourbon! This easy bourbon marinade takes a couple of minutes to prepare, then it's grill time! Don't even think about skipping the blue cheese fondue -- it may be the best part!
Ingredients
Sirloin
- 1 lbs. sirloin cubed for grilling
- 1 butternut squash, cubed Bake butternut squash about 80% of the way prior to grilling.
- 8 oz. package of cremini mushrooms
- Cherry Tomatoes
- chopped chives
Bourbon Marinade
- 2 cups soy sauce
- 11/2 cups Bourbon
- 6 shallots, sliced
- 6 garlic cloves, sliced
- 1 orange, sliced
- 1 cup brown sugar
Blue Cheese Fondue
- 2 cups heavy cream
- 1 whole garlic clove
- Small parmesan rind
- Blue Cheese to taste
- Salt to taste
Instructions
Bourbon Marinade
- Heat bourbon and soy sauce over medium high heat. Add sugar to dissolve.
- Remove from heat, add remaining ingredients and cool.
Blue Cheese Fondue
- Heat heavy cream, garlic, and parmesan rind over medium heat and reduce by half.
- Whisk in blue cheese until melted completely.
- Salt to taste, then strain through a fine mesh strainer. Keep warm until serving.
Sirloin Skewers
- Marinate sirloin at room temperature for one hour prior to grilling.
- Assemble skewers with marinated sirloin, butternut squash, mushrooms, and tomatoes.
- Grill about two minutes per side until desired temperature. Drizzle skewers in blue cheese fondue and top with chives.
