Here’s a twist on traditional escargot from the romantic Fig Tree. Chef Byron Bergeron sauteés garlic in butter and then de-glazes the pan with Rosè, which gives this rich dish a delicious Mediterranean aspect. Cream and ground Chorizo round out the incredible flavors.
On a recent trip to Napa we had dinner at Michael Chiarello’s restaurant in Yountville called Bottega. Dinner was wonderful, and I fell in love with these hammered copper water glasses. What a great time of year to visit some Texas wineries. If you haven’t visited Dry Comal Creek Winery on Hwy 46 just west of Gruene, then put it on your list. Franklin and Sabrina Houser are delightful hosts, plus you’ll taste a wine you don’t find very often that’s made from Black Spanish grapes…a unique vino. While you’re there, ask to try their sangria. They were nice enough to give me the recipe to share with you.
