Goya Foods’ Arepa with Chicken and Avocado

Ready for a taste of Venezuela? Goya Foods’ Executive Chef Fernando Desa guides Tanji through making a Reina Pepiada, a Venezuelan spin on chicken salad. The dish starts by making crispy arepas and then filling them with shredded chicken, minced garlic, avocado and a vibrant lemony mayo. It’s an easy lunch that’s filling and easy to pack, too!

Ingredients
  

Chicken Salad

  • 2 packets GOYA Powdered Chicken Flavored Bouillon
  • 2 boneless, skinless chicken breasts (about 1 pound)
  • ½ cup GOYA Mayonnaise
  • ½ cup finely chopped yellow onion
  • ¼ cup GOYA Guacamole
  • 1 teaspoon GOYA Minced Garlic
  • 2 teaspoons finely chopped fresh cilantro
  • GOYA Adobo All-Purpose Seasoning with Pepper
  • 1 Hass avocado halved, pitted, peeled and chopped

Arepa

  • 2 cups GOYA Masarepa (Pre-Cooked White Corn Meal)
  • 1 teaspoon salt
  • 2 teaspoons GOYA Extra Virgin Olive Oil

Instructions
 

Make the Chicken Salad

  • In a medium saucepan over medium-high heat, bring 4 cups of water to a boil. Add the bouillon and stir until dissolved. Add the chicken, bring the heat down to a simmer and cover until cooked through, about 20 minutes. Remove the chicken and transfer to a plate. Let cook completely.
  • In a large bowl, shred the chicken. Add the mayonnaise, onion, guacamole, garlic and cilantro. Season with adobo and gently fold in the avocado. Refrigerate until ready to use.

Make the Arepa

  • In a medium bowl, combine the masarepa and salt. Add 2½ cups of lukewarm water and stir to combine. Let sit for 5 minutes. Using wet hands, knead the dough until smooth. Divide the dough into 8 portions. Form dough into small smooth balls.
  • In a large non-stick skillet, heat oil over medium-high heat. Working in batches, add the dough balls, leaving at least 3 inches of space between each ball. Using the palm of your hand, flatten the balls to ½-inch thickness. Cook, flipping once, until golden brown on both sides, about 8 minutes total. Repeat with the remaining dough.
  • Using a knife, halve the arepas horizontally without cutting all the way through. Divide filling evenly among arepas and serve!

Notes
