John Soules Foods’ Creamy Tuscan Chicken

Pasta night is always a hit at our homes and this Italian-inspired dish is a total winner! Penne pasta, tomatoes, spinach and John Soules Foods ready-to-eat Rotisserie chicken strips are tossed in a cheesy, garlicky creamy sauce that’s sure to be a weeknight favorite. Claire Soules shows us how to assemble this easy meal here.

Ingredients
  

  • 1 pound penne pasta
  • 2 Tablespoons unsalted butter
  • One 16-ounce bag JSF Rotisserie Chicken
  • 3 cups baby spinach
  • 8 ounces sun dried tomatoes in oil drained
  • 1 tomato diced
  • 4 garlic cloves minced
  • 3 cups heavy cream
  • ½ cup grated parmesan cheese
  • Kosher salt and freshly ground black pepper
  • 1 teaspoon Italian seasoning
  • Chopped parsley for garnish
  • Red pepper flakes for sprinkling

Instructions
 

  • Cook the pasta according to package instructions. Strain the pasta and set aside.
  • Meanwhile, melt the butter in a large sauté pan. Add the JSF Rotisserie Chicken, spinach, sun dried tomatoes, diced tomatoes and garlic together and cook over moderately high heat, stirring occasionally, until the chicken is warmed through. Add the spinach and stir until it wilts.
  • Add the heavy cream and pasta and simmer, stirring occasionally, until the sauce has thickened and the pasta is coated, about 2 minutes. Add the parmesan cheese, Italian seasoning and season with salt and pepper. Spoon into bowls, sprinkle parsley and red pepper flakes and serve!
