Pancake in a Jar

Reimagine the way you consume your flapjacks! This version comes served up in a jar, with fresh fruit built right in! Many thanks to Boy & the Rabbit for this fun recipe!

Servings 2 Pancake Jars

Ingredients
  

  • 1 cup all-purpose flour
  • 1 Tablespoon baking powder
  • 2 Tablespoon granulated sugar
  • ¼ teaspoon kosher salt
  • ¾ cup milk (can use cow or nut milk)
  • 2 Tablespoons unsalted butter or vegan margarine melted, plus more for serving
  • ¼ cup fresh blueberries plus more for garnish
  • Maple syrup for drizzling

Instructions
 

  • In a small bowl, whisk the flour with the baking powder, sugar, and salt. Mix in the milk and melted butter until your batter is smooth.
  • In two 16-ounce glass jars, divide the ¼ cup of blueberries and place in the bottom of the jars. Fill each jar halfway with batter (the pancake will rise while cooking). Microwave on HIGH for about 90 seconds until the pancakes are fluffy and cooked through. Let cool slightly before topping with more butter and blueberries and drizzling with maple syrup.
