Be More Pacific’s Kare Kare

If you’re unfamiliar with Filipino food, don’t worry! This customary dish is easy to make and a fun introduction to the world of Filipino flavors. While Kare Kare is traditionally made with oxtail, Be More Pacific has added a Texas flair by using Brisket. The rich peanut sauce is addicting and so easy to make, even your kids will love it! If you’re ever in the mood to try something different, keep this recipe in mind!

Ingredients
  

  • 1 ounce onions (quarter cut)
  • 1 Tablespoon minced garlic
  • .5 cups Brisket drippings
  • 10 ounces water
  • 3 ounces smooth peanut butter
  • 1 Tablespoon white sugar
  • Kosher salt to taste

Instructions
 

Brisket

  • Trim brisket of chunky fat especially the deckle. Should be about 1/4"of fat all around
  • Season brisket with 1/2 salt & 1/2 pepper mix. Enough to generously cover the whole brisket.
  • Place brisket in full pan fat side up on a cooling rack so it doesn’t sit on the bottom. Add 3 cups of water & wrap tightly with foil.
  • Bake @ 300 degrees covered for 4-5 hours (or until brisket is forktender).

Sauce

  • Sautee onions & garlic in a large pot.
  • Add water, Peanut Butter, sugar & salt, mix well. Bring to a boil.
  • Add the Brisket drippings to the mix.
  • Simmer the new mixture for 15-20 minutes or until the sauce thickens to where it coats the back of a spoon.
  • Puree the sauce in a blender until smooth.

Plating

  • Steam some bok choy, long beans, & eggplant.
  • Add the steamed veggies, diced brisket, & sauce all in one bowl. Serve w/ aside of salted shrimp paste and jasmine rice.

Notes

Make-Ahead: The Brisket needs to be cooked for 4-5 hours, so prepare accordingly.
