La Hacienda de los Barrios’ Cortadillo Estilo Zuazua

La Hacienda de los Barrios serves up so much more than mouthwatering Tex-Mex food. This San Antonio gem has a stunning patio with live music every night of the week. This Cortadillo Estilo Zuazua is a beloved Barrios family recipe. Think of it like a Mexican stir-fry, with beef sautéed with onions, tomatoes, and oregano until juicy and tender. Serve fajita-style with warm tortillas, like we do here, or on a bed of cilantro rice.

Ingredients
  

  • 3 Tablespoons vegetable oil
  • 3 pounds beef tenderloin cut into 1-inch cubes
  • Pinch of garlic powder
  • Salt and pepper
  • 3 tomatoes chopped
  • ½ onion chopped
  • 2 Tablespoons dried Mexican oregano
  • Warm corn or flour tortillas for serving

Instructions
 

  • In a large deep skillet or a Dutch oven, heat 2 tablespoons of the oil over moderate heat. Season the beef with the garlic powder, salt, and pepper. Working in batches, sear the beef, turning occasionally, until browned on all sides, 6 to 8 minutes per batch. Transfer to a bowl and repeat with the remaining tenderloin. Return all the meat to the pan, reserving the juices in the bowl.
  • Add the remaining 1 tablespoon of oil to the pan, then add the tomatoes and onion. Cook over moderate heat, stirring occasionally, until the tomato begins to break down and the onion is tender, about 8 minutes. Return the reserved juices to the pan, along with the oregano and 1 cup of water. Bring to a simmer, then reduce the heat to moderately-low and simmer until the beef is tender and cooked through, 5 to 10 minutes. Place the skillet right on the table and serve with warm tortillas.
