Pignetti’s Salmon Alejandro

The salmon Alejandro from Pignetti’s in Temple, Texas, is an impressive dish you can feel good about devouring. Salmon is one of the healthiest proteins to work into your diet. It’s rich in beneficial omega-3 fatty acids, as well as potassium and B vitamins. One 8-ounce salmon fillet will fill you up and only contains about 400 calories.

Ingredients
  

  • 4 8-ounce salmon fillets skin removed
  • Salt & pepper
  • 1 Tablespoon olive oil plus 2 teaspoons
  • 1 cup sliced mushrooms
  • 2 cups vegetable noodles (spiralized celery, carrots, and/or zucchini)
  • 1 Tablespoon minced garlic
  • 2 cups baby spinach
  • 2 Tablespoons cold butter

Instructions
 

  • Preheat the oven to 450°F. Season one side of the salmon with salt and pepper. In a large ovenproof nonstick skillet, heat 1 tablespoon of the oil over moderately-high heat. Arrange the salmon seasoned side down. Sear for 3 minutes. Flip the salmon and sear for 30 seconds. Scatter the mushrooms around the salmon and transfer to the oven.
  • In a large skillet, heat the remaining 2 teaspoons of oil over moderately-high heat. Add the vegetable noodles and garlic and season with salt and pepper. Cook, stirring occasionally, until tender, 1 to 2 minutes.
  • Add the spinach and cook, stirring, until wilted.
  • Divide the vegetables between 4 plates. Remove the salmon from the oven and arrange on top of the vegetables.
  • Add the cold butter to the skillet with the mushrooms and cook until melted. Season with salt and pepper. Spoon the mushrooms over each fillet of salmon and serve right away.
