King's BierHaus' Austrian Potato Salad

Ingredients
  

  • 5 pounds red potatoes
  • 1 cup white vinegar
  • 1 cup olive oil
  • ¼ cup granulated sugar
  • 1 Tablespoon Dusseldorf mustard
  • 1 Tablespoon black pepper
  • 2 cups water
  • Kosher salt
  • 1 cup diced yellow onion
  • 1 cup chopped cooked bacon
  • ¼ cup chopped fresh parsley

Instructions
 

  • Boil the potatoes until they are fork tender. Then drain, cool and remove potatoes skins. Cut the peeled potatoes into 1/4 inch pieces.
  • In a separate bowl, mix vinegar, olive oil, sugar, mustard, black pepper, water and season with salt. After the sugar and salt have dissolved, add the onions, bacon and parsley. Mix well then pour over potatoes.
  • Mix all ingredients together, cover and chill before serving.
