Sysco Central Texas' Shrimp Pasta

Shrimp is such a versatile protein. It’s mild in flavor and soaks up any seasoning or sauce it is immersed in. For a simple weeknight dinner, Chef Dustin Alexander at Sysco Central Texas, is sharing a recipe for a delicious Mediterranean Shrimp Pasta. Made with plump Blue Diamond shrimp, fresh tomatoes, garlic and Kalamata olives, this sauce comes together with such ease! Top it to a bed of garlic parsley pasta, and you have an impressive meal. Ingredients
  

  • 3 oz. linguine garlic and parsley pasta preferred
  • olive oil
  • 5 shrimp
  • 1/2 oz. yellow onion diced
  • 4 1/4 oz. Tomatoes
  • 1/2 oz. Kalamata olives sliced
  • 1 clove garlic sliced
  • 3 oz. Vegetable juice V8 Vegetable Juice
  • 1 Tablespoon Parsley
  • 1/4 teaspoon red pepper flakes
  • 1 oz. unsalted butter

Instructions
 

  • In a salted pot of boiling water cook the pasta, when the pasta is cooked remove it from the pot and place in ice water to stop the cooking. Remove from the water once cooled and hold the pasta until it is time to serve.
  • In a sauté pan over medium heat add the olive oil then add the shrimp and onions. Cook the shrimp for about two minutes then flip. Once you flip the shrimp, add in the tomatoes and the sliced olives. Cook for about 30 seconds then add in the garlic. Once you can smell the garlic, add crushed red pepper and the vegetable juice. Allow the sauce to reduce and finish with the butter and parsley.
  • While the sauce is reducing add the cooked pasta back into a pot of boiling water just to heat the pasta about 45 seconds then remove from the water and plate the pasta. Arrange the shrimp around the pasta and add the sauce over the top.
