The Pudding
1
large egg

Tablespoons
melted unsalted butter

smooth apricot jam

teaspoon
baking soda
1/2
cup
brown sugar
1
cup
All-purpose flour
1
pinch
salt
1
teaspoon
vanilla extract
1/2
cup
whole milk
The Caramel Sauce
1
cup
dark brown sugar
1
pinch
salt
1
Tablespoon
smooth apricot jam
1/2
cup
unsalted butter
cut into squares
1 1/2
cup
heavy cream
Toppings
Whipped cream or Vanilla bean ice cream
Instructions
The Pudding
Cream the butter and sugar together until butter is pale and soft
Beat in the apricot jam
Beat in the egg
Dissolve the Bicarb soda into the milk
Sift together the cake flour and salt and add to the batter alternately with the milk
Mix in the vanilla extract
Spoon the batter into an ovenproof bowl or individual ramekins that have been sprayed with non– stick spray
Pour half the caramel sauce over the batter
Bake the Malva pudding in a preheated oven at 350 degrees for 35 min or until risen and golden brown
Remove from the oven and pour remaining sauce a little at a time until all the sauce is absorbed
Serve with whipped cream or vanilla bean ice-cream
The Caramel Sauce
Place all the ingredients together in a medium saucepan
Bring the sauce to the boil, stirring continuously
Reduce the heat and simmer for two minutes
Remove from heat and keep warm
