Relish Restaurant & Bar's Granola

This Spring, bright meets buttery with this granola recipe from Relish Restaurant & Bar in Houston -- it's one of our favorites. Top it off with some fresh strawberries from The Poteet Strawberry Festival and we are winning x2.

Ingredients
  

Egg White Mixture

  • 3/4 cup melted butter
  • 1/2 cup packed brown sugar
  • 1/2 cup honey
  • 1/4 cup maple syrup
  • 1/4 cup melted butter
  • 3 egg whites lightly beaten
  • 2 teaspoons ground cinnamon
  • 1-1/2 teaspoons salt
  • 3 teaspoons vanilla extract

Granola

  • 8 cups old-fashioned oats
  • 1 cup toasted almonds
  • 1 cup toasted pecans
  • 1 cup toasted pumpkin seeds
  • 2 cups dried cranberries

Instructions
 

Egg White Mixture

  • Whisk all ingredients to combine.

Granola

  • Preheat oven to 300°.
  • Spread old-fashioned oats on a sheet tray lined with parchment and toast for 25 minutes in oven.
  • Spread almonds, pecans and pumpkin seeds on the same sheet tray and toast for 10 minutes in oven.
  • Combine toasted oats, nuts and pumpkin seeds with the egg white mixture. When coated, spread on a sheet tray lined with parchment and bake at 300 for about 20-25 minutes tossing every 8 minutes.
  • Add cranberries after mix is completely toasted and dry. Let cool completely and store.
