Relish Restaurant & Bar's Granola
This Spring, bright meets buttery with this granola recipe from Relish Restaurant & Bar in Houston -- it's one of our favorites. Top it off with some fresh strawberries from The Poteet Strawberry Festival and we are winning x2.
Egg White Mixture
- 3/4 cup melted butter
- 1/2 cup packed brown sugar
- 1/2 cup honey
- 1/4 cup maple syrup
- 1/4 cup melted butter
- 3 egg whites lightly beaten
- 2 teaspoons ground cinnamon
- 1-1/2 teaspoons salt
- 3 teaspoons vanilla extract
Granola
- 8 cups old-fashioned oats
- 1 cup toasted almonds
- 1 cup toasted pecans
- 1 cup toasted pumpkin seeds
- 2 cups dried cranberries
Granola
Preheat oven to 300°.
Spread old-fashioned oats on a sheet tray lined with parchment and toast for 25 minutes in oven.
Spread almonds, pecans and pumpkin seeds on the same sheet tray and toast for 10 minutes in oven.
Combine toasted oats, nuts and pumpkin seeds with the egg white mixture. When coated, spread on a sheet tray lined with parchment and bake at 300 for about 20-25 minutes tossing every 8 minutes.
Add cranberries after mix is completely toasted and dry. Let cool completely and store.
