1wholebutternut squash, cut in half lengthwise and seeds removed
1/2cupbutter
1/4cupbrown sugar
Salt & pepper to taste
Instructions
Cut squash and remove seeds and roast face-down on a greased sheet pan at 400 degrees for 30-40 minutes. Remove from oven and scoop flesh from skin into a bowl and add butter and brown sugar and season to taste. Blend with an emersion blender until smooth. Can also be blended in a blender.
