Rathskeller's Chicken Artichoke Pasta

Ingredients
  

  • 2 ounces fettuccine noodles
  • 2 teaspoons olive oil
  • Salt and pepper for seasoning
  • 6 ounces boneless, skinless chicken breast
  • 1 teaspoon lemon juice
  • 2 ounces white wine
  • 1 ounce capers
  • 6 artichoke hearts quarters
  • 2 Tablespoons scampi butter (recipe below)

Scampi Butter

  • 1 pound butter softened
  • ½ Tablespoon chili powder
  • ½ Tablespoon paprika
  • ¼ ounce Tabasco sauce
  • ½ Tablespoon salt and pepper mix
  • ½ Tablespoon fresh ground garlic
  • 2 Tablespoons lemon juice

Instructions
 

  • Cook fettuccine noodles as directed on box.
  • Heat olive oil in a saucepan.
  • Lightly salt and pepper the chicken breast and sauté over medium heat until almost cooked through.
  • Add lemon juice, white wine, capers, and artichoke hearts. Then add 1 rounded tablespoon of scampi butter.
  • Once melted, pour chicken mixture over fettucine noodles and serve.
