Water Street Market's Shrimp Picayune Sauce

Ingredients
  

  • 1 cup olive oil
  • ¾ cup clarified butter
  • ½ cup liquid brown sugar
  • 2 Tablespoons Worcestershire sauce
  • 3 bay leaves
  • ½ cup lemon juice
  • ½ cup + 2 Tablespoons vermouth (settles to bottom, layers)
  • 1 Tablespoon + 1 teaspoon oregano
  • 1 Tablespoon + 1 teaspoon thyme
  • 1 Tablespoon + 1 teaspoon granulated garlic 
  • 1 Tablespoon + 1 teaspoon salt
  • 1 Tablespoon + 1 teaspoon black pepper
  • 2 teaspoons cayenne pepper
  • 1 teaspoon ground rosemary
  • teaspoons Tabasco sauce
  • ¾ teaspoon poultry seasoning

Instructions
 

  • Combine ½ cup liquid brown sugar (or melt ½ cup of brown sugar with 2 tablespoons of water) with clarified butter over medium-high heat until sugar fully dissolves into liquid.
  • Then add all remaining ingredients one at a time and stir well until thoroughly mixed.
