Walton's Fancy & Staple Bacon and Pistachio Chicken Salad

Change up chicken salad with a pistachio punch! You'll love this Bacon and Pistachio Chicken Salad from Walton's Fancy & Staple in Austin. It's another quick and easy recipe that's great for workday lunches but won't take you all morning to prepare with its nine simple ingredients (and a little salt and pepper!).

Ingredients
  

  • 1 whole free range chicken
  • 1 stalk of small diced celery
  • ½ small diced red onion
  • 1 small diced green apple
  • ½ cup of small diced bacon
  • ½ bunch of minced parsley
  • ½ cup pistachios
  • ½ cup halved grapes
  • 1 cup mayonnaise
  • 1 teaspoon salt plus 1 sprinkled on top of chicken
  • 1 teaspoon pepper plus 1 for sprinkling on top of the chicken

Instructions
 

  • Place the chicken on a roasting pan, sprinkle with salt and pepper and cook for 1 hour at 350 degrees or until the juices run clear. Once finished cooking place into the refrigerator to cool.
  • While the chicken is cooling place the pistachios into a food processor and give it a few pulses until the nuts are broken down into a small size. Or you may also chop them with a sharp chefs knife.
  • Once the pistachios are blended pour into a large mixing bowl, add all the other ingredients into the mixing bowl and mix until fully combined.
  • Begin to pick the chicken (removing the skin first) and pulling the meat away from the bone, be careful to make sure the chicken is in small chunks. Once finished picking, place the chicken into the mayonnaise mixture and mix until fully incorporated and place into an airtight container, label, and place under refrigeration. Will stay fresh for 5 days.
