Terra's Kitchen's Mediterranean Mezze Salad

This light and healthy meal is perfect with freshly baked pita bread. Our friends at Terra's Kitchen show you how to make it with a tangy hummus dressing.

Ingredients
  

  • ounces green leaf lettuce
  • 3 ounces English cucumber
  • ounces mixed cherry tomatoes
  • ¾ ounce kalamata olives
  • ounces hummus
  • Multigrain pita chips with veggies
  • ounce red wine vinegar
  • 6 ounces chickpeas

Instructions
 

  • Chop lettuce.
  • Halve olives.
  • Halve tomatoes and slice cucumbers.
  • Make dressing: Whisk ¼ cup hummus with ONLY 1 tablespoon of the red wine vinegar and ½ tablespoon water in a small bowl. Salt and pepper to taste.
  • To serve, arrange ingredients on a serving platter. Drizzle with dressing.
