Terra's Kitchen's Mediterranean Mezze Salad
This light and healthy meal is perfect with freshly baked pita bread. Our friends at Terra's Kitchen show you how to make it with a tangy hummus dressing.
- 2½ ounces green leaf lettuce
- 3 ounces English cucumber
- 6½ ounces mixed cherry tomatoes
- ¾ ounce kalamata olives
- 8½ ounces hummus
- Multigrain pita chips with veggies
- ⅙ ounce red wine vinegar
- 6 ounces chickpeas
Chop lettuce.
Halve olives.
Halve tomatoes and slice cucumbers.
Make dressing: Whisk ¼ cup hummus with ONLY 1 tablespoon of the red wine vinegar and ½ tablespoon water in a small bowl. Salt and pepper to taste.
To serve, arrange ingredients on a serving platter. Drizzle with dressing.
