Camarones en Hamaca Henesy

This is my favorite dish at Arturo Boada Cuisine in Houston! Sautéed shrimp with hearts of palm, tomato, cilantro in a soy-ginger sauce on a bed of sweet plantains...enjoy!

Ingredients
  

  • 1 T extra virgin olive oil Massoud
  • 1/2 lb shrimp 16/20 peeled
  • 11/2 ox hearts of palm sliced
  • 1 t capers
  • 1 oz cherry tomatoes diced
  • 1 t Garlic-chopped
  • 1/2 oz oz. fresh parsley chopped
  • 1 T fresh cilantro whole leaf
  • 1/2 t Red Pepper Flakes
  • pinch salt
  • 1/2 t House Soy Sauce
  • 1/2 oz oz. whole butter
  • 2 ea. sweet plantains sliced and fried ½ oz ea

Instructions
 

  • In a hot skillet, heat the olive oil. Add shrimp and cook 30''. Add hearts of palm, capers, tomatoes, garlic, parsley, cilantro, red pepper flakes, salt and plantains. Cook 1'. Add soy sauce and cook 1'. Add butter until incorporated.
  • Serve in a medium size bowl.
