Bistro Vatel's Heirloom Tomato Salad

Ingredients
  

  • 6-8 Heirloom Tomatoes
  • 2 T basil thinly sliced
  • 1/2 c Basil oil olive oil and blanched basil about 10 seconds in blender then paper filter
  • 1/2 c Vinaigrette (Dijon mustard olive oil, red wine vinegar and Worcestershire)
  • 5 shallots chopped
  • 5 oz goat cheese
  • Salt and pepper to taste

  • Cut a variety of tomatoes in wedges. Place in mixing bowl. Mix with the chopped basil, shallots, vinaigrette to taste and toss to plate. Place a mound of tomatoes on a chilled plate and garnish with slice of goat cheese. Drizzle basil oil around and sprinkle goat cheese with salt and pepper.
