Authentic Munchener Apfel Pfannkuchen

A recipe I've waited 15 years to get my hands on! Translated from an Old World cookbook and adapted at The Magnolia Pancake Haus. Granny smith apples, zesty cinnamon and secret spices all combined to create a puffed pancake that is an authentic taste of Bavaria. Served with powdered sugar and European-style whipped cream.

Ingredients
  

  • 1 slice Granny smith apple (peeled cored andthin)
  • ½ cup brown sugar
  • ½ Tsp Cinnamon
  • 1/8 Tsp nutmeg
  • 2 oz butter cold

Batter:

  • 3 eggs
  • ½ cup milk whole works best
  • ½ oz vanilla
  • ½ cup A/P Flour
  • 1 Tsp sugar
  • ½ salt

Instructions
 

  • You will need a 10” non stick sauté pan that can go into the oven. Preheat your oven to 375*
  • Peel, core and slice apple place into pan
  • Add cinnamon, nutmeg and brown sugar to pan.
  • Sauté apples over med to low heat until slightly soft (3-5 min)
  • While apples sauté, prepare batter. Mix eggs, milk and vanilla in a bowl, add flour, sugar and salt, whisk lightly (some lumps are ok but not too many)
  • Increase the heat under the pan to medium and to the apples add the brown sugar and the butter and cook until a syrup forms (3 min more or less)
  • When the apple mixture is ready add the batter all @ once to the center of the pan. With a high heat spatula swirl the apple syrup mix through the batter to form ribbons (you DO NOT want to fully combine the apple sugar syrup into the batter)
  • Cook on the stovetop until small bubbles form around the edge.
  • Place pan into the oven and cook for 12 minutes.

To Serve:

  • Remove from the oven (the pan will be very hot so get a mitt or towel or whatever) and invert a 12” plate over the pan , flip the pan to turn out the Pfannekuchen. Sprinkle with powdered sugar, top with whipped cream Enjoy!

Tip:

  • This makes a tasty dessert for a dinner party. You can use a pizza cutter to slice it into wedges and serve it with some vanilla ice cream.
