410 Diner's Sonora Casserole

The 410 Diner has long been one of my favorite places to eat... talk about comfort food. The owner was kind enough to let me share his wonderful recipe with you. Enjoy!

Ingredients
  

  • 2 cups canned tomato sauce
  • 1/2 teaspoon ground cumin
  • 1 teaspoon cayenne pepper
  • 1 teaspoon white vinegar
  • 1/4 teaspoon granulated garlic
  • Salt to taste
  • 6 in fresh corn tortillas cut to ½'' strips
  • 3 cups zucchini sliced
  • 1 cup fresh or canned corn
  • 4 ounces can diced green chilies
  • 3/4 cup grated cheddar
  • 3/4 cup sour cream
  • thinly sliced green onions for garnish

  • The 410 Diner has long been one of my favorite places to eat... talk about comfort food. It's always good! Whether you're in the mood for chicken fried steak or a simple sautéed trout, 410 Diner never disappoints. It's also VERY kid friendly!
  • Their vegetables can be a meal all by themselves. I often get their fried broccoli, stewed cabbage (even if you don't like cabbage, I'll bet you love this!) and last but certainly not least--the Sonora Casserole. Dean, the owner was kind enough to let me share his wonderful recipe with you. Enjoy!
  • Preparation:
  • Slice zucchini 1/4" thick and steam or microwave until half cooked. Combine tomato sauce, chilies, corn, vinegar, and spices in a large mixing bowl. Combine tortilla chips, zucchini, and tomato sauce mixture. Mix thoroughly and put into a 9x13" baking dish. Top with cheddar cheese and bake covered at 350 degrees for 25-30 minutes. Garnish with sour cream, green onions, and tortilla chips.
