Braised Lamb Poutine

You'll eat up every bit of this Braised Lamb Poutine from my friends at Craft Burger Food Truck. The lamb shanks are seasoned with a special Killa Seasoning. Fetch your favorite fries - we've got how to top'em!

Ingredients
  

  • 5 lbs Lamb Shanks
  • 2 each yellow onions peeled and quartered
  • 2 Carrots chopped
  • 4 stalks Celery chopped
  • 5 cloves garlic smashed
  • Killa Seasoning to taste
  • water enough to cover bones
  • 1/4 cup flour
  • 1/4 cup butter

Instructions
 

  • Season Lamb shanks with killa seasoning (www.killaseasoning.com) and sear in roasting pan.
  • Sauté onions, carrots, garlic and celery in roasting pan till browned and tender. Add bones to roasting pan and cover with water and simmer till meat easily pulls from the bone about 4 hours. Strain everything out of pot just leave stock.
  • Melt butter in a pan and then add flour to it and mix together until it looks like wet sand. Add a little stock at a time then add the roux back to the stock. Bring to a boil. Make sure to keep stirring to make sure it doesn’t burn. Then bring down to a simmer and simmer for 20 minutes.
  • Pick meat off of bones and add to gravy. Pour gravy & meat on top of fries, add cheese and top with green onions.
