Beet Caprese Salad

Ingredients
  

  • 4 oz basil
  • ¼ cup garlic
  • 1 cup olive oil
  • ¼ cup Parmesan
  • 1 Tb Fresh Ground Pepper
  • 1 tsp kosher salt

Instructions
 

  • Roast off beets. Cool, peel, slice. Top with sliced fresh mozzarella, pesto, and reduced balsamic.

For the Pesto

  • Blend all ingredients in food processor.
