Chicken-Fried Pecan Pie with Chocolate Jack Daniels Ice Cream

Welcome to Texas, y'all! This is the most delicious dessert from the Cabernet Grill in Fredericksburg. It may sound unusual, but wait till you taste it. Best of all, you can make both the pie and the ice cream ahead of time. Enjoy!

Ingredients
  

Pecan Pie

  • cups Texas pecan pieces
  • 3 whole eggs
  • 1 cup dark corn syrup
  • ½ cup granulated sugar
  • cup butter melted
  • 1 Tablespoon Mexican vanilla
  • teaspoon kosher salt
  • One 9" unbaked pie shell

Chocolate Jack Daniels Ice Cream

  • 4 cups half-and-half cream
  • 6 egg yolks
  • 1 cup sugar
  • 4 ounces dark chocolate chopped
  • ¼ cup Jack Daniels whiskey

Chicken-Fried Pecan Pie with Chocolate Jack Daniels Ice Cream

  • 1 Pecan Pie partially frozen
  • 1 cup flour
  • 2 cups milk
  • 1 whole egg beaten
  • 2 cups Japanese breadcrumbs Panko
  • 8 scoops Chocolate Jack Daniels Ice Cream
  • Peanut oil

Instructions
 

Pecan Pie

  • Preheat oven to 350°.
  • Place pecan pieces on a tray and place in oven for 3 minutes to toast.
  • In a medium-sized bowl, beat eggs well and stir in corn syrup, sugar, butter, vanilla, and salt.
  • Fold pecans into mixture and pour into the pie shell.
  • Bake at 350° for about 50 minutes or until a knife inserted halfway between the center and edge of the pie comes out clean.
  • Allow pie to cool before slicing.

Chocolate Jack Daniels Ice Cream

  • Place cream and egg yolks in a double boiler and cook until mixture starts to thicken slightly, stirring continually.
  • Remove from heat as soon as you are able to draw a line across the back side of a spoon that has been dipped in the cream mixture.
  • Add sugar, chocolate, and Jack Daniels; stir until sugar and chocolate are melted.
  • Allow mixture to cool and pour into an ice-cream maker, following manufacturer's instructions.
  • (Note: Due to alcohol content, the ice cream may not set up completely in the ice-cream maker and may need to be placed in the freezer for a few hours prior to use.)

Chicken-Fried Pecan Pie with Chocolate Jack Daniels Ice Cream

  • Fill a deep fryer according to manufacturer's directions with peanut oil and heat to 350°.
  • Set out 3 bowls and place flour in first bowl, milk and eggs mixed together in second bowl, and Japanese breadcrumbs in third bowl.
  • Cut partially frozen pecan pie into 8 slices and dredge each slice in flour to coat completely. Shake off any excess flour.
  • Dip pie slice into egg mixture to coat and then into breadcrumbs. Follow these steps with each slice of pie.
  • Place pie slices 1 or 2 at a time into fryer and cook for about 3 minutes until golden brown and warm in the center. Keep pie slices warm and continue cooking remaining slices of pie.
  • Place the fried pie on individual plates and top with ice cream, serving immediately.
