To make fresh breadcrumbs, take any stale or day old bread and pulse it in a food processor until finely chopped. You can also do this by hand with a knife. We like to keep a bag of these in our freezer and pull out the amount you need as you’re cooking—the breadcrumbs defrost quickly. You can use store-bought breadcrumbs here, but you will not get the same crunchy texture.
