Goya Foods’ Baseball Beef Sliders with Bacon-Guava Jam

Goya Foods’ Executive Chef Fernando Desa covers all the bases for a great tailgating dish: sliders made with pure Nolan Ryan beef and topped with home-run bacon-guava jam. These aren’t your average sliders! Desa takes game day to the next level by showing you how to make homemade condiments, including a truffle aioli, that are well worth that added effort.

Ingredients
  

Aioli

  • 1 cup Goya Foods Mayo
  • 2 teaspoons minced chives
  • 2 teaspoons Goya Foods Minced Garlic
  • 2 teaspoons Goya Foods Lemon Juice
  • Kosher salt
  • Truffle oil to taste (add sparingly)

Jam 

  • 1 pound bacon diced
  • 2 large white onions thinly sliced
  • 1 envelope Goya Foods Sazon without Annatto
  • ¼ cup Goya Foods Panela (unrefined cane sugar)
  • 3 Tablespoons Goya Foods Guava Jelly
  • 1 Tablespoon Goya Foods Balsamic Vinegar

Burgers

  • Vegetable oil for greasing
  • 1 pound Nolan Ryan 90/10 Ground Wagyu Beef
  • Goya Foods Adobo with Pepper
  • 8 slices Muenster cheese
  • Microgreens for garnish (optional)
  • 8 slider buns split and toasted

Instructions
 

Make the Aioli

  • In a medium bowl, combine all the ingredients and whisk until smooth. Cover and refrigerate until ready to use.

Make the Jam

  • In a medium pot, cook the bacon until crispy. Add the onion and cook over moderate heat, stirring occasionally, until softened, about 8 minutes. Add the sazon and panela and cook, stirring, until combined. Add the guava jelly and ½ cup of water. Cook, stirring occasionally, until thickened, about 5-10 minutes. Stir in the balsamic vinegar.

Prepare the Sliders

  • Heat grill or grill pan to medium-high heat and oil the grates. Shape the beef into small 2-ounce patties and then season all over with adobo.
  • Grill the patties until charred on the bottom. Flip, top each patty with a folded piece of cheese, and then grill until the sliders are medium-rare within and the cheese is melted, about 3 minutes more. Transfer to a plate.
  • To assemble the sliders, top each bottom bun with a patty. Smear some aioli and the jam on the top buns. Add microgreens for garnish. Close the sliders and serve right away.

Notes

You can find Goya Foods Products at most major grocery stores, but if your local grocer doesn’t carry these products, you can request them!
