The Original Black’s Barbecue’s Maple Sausage Donut Bites

Barrett Black, the fourth-generation owner of The Original Black’s Barbeque in Lockhart, is sharing this creative mash-up! Smoked sausage flambéed in bourbon, coated in maple syrup, and sandwiched in halved donut holes makes an epic sweet treat that’s part appetizer, part dessert. Feel free to skip the bourbon so these are kid-friendly.

Ingredients
  

  • 3 Black's Barbecue Original Flavor sausage rings (¼ pound each)
  • ½ cup maple syrup
  • ¼ cup bourbon
  • 2 dozen glazed donut holes split

Instructions
 

  • Cook sausage as desired and cut into bite-sized coins.
  • In a large cast-iron skillet, toss the sausage coins in maple syrup. Heat the sausage and maple syrup mixture with a gas torch, careful not to spend too much time on one particular piece so neither the syrup nor the sausage burns. If you don’t have a torch, heat your skillet over moderate heat and cook, stirring, until the sausage is caramelized and glazed.
  • Turn off any flames or heating source and add a splash of bourbon to the skillet (or more, depending on what you like). Mix and carefully flambé (or sauté on the stove).
  • Sandwich the sausages between the split donut holes and secure with a toothpick. Transfer to a platter and enjoy!
