Café at the Ridge’s Salisbury Steak

You can always expect a delicious and hearty meal whenever you pay a visit to Café at the Ridge, and this Salisbury steak is no exception. Different from your typical dish that uses brown gravy, this version has a sauce with caramelized onions, mushrooms, and red wine.

Ingredients
  

  • Four 8-ounce ground beef patties
  • Kosher salt and pepper
  • Vegetable oil
  • 1 cup sliced mushrooms
  • 1 cup thinly sliced onion
  • 4 cups dry red wine
  • 2 cups brown gravy (see Note)

Instructions
 

  • In a large cast-iron skillet, heat 2 tablespoons of oil. Working in batches, sear the patties over high heat, turning once, until deeply browned and medium rare within, about 8 minutes. Transfer to a plate and cover with foil to keep warm. Do not rinse out your skillet.
  • In the same skillet, add the mushrooms and onions and cook over moderate heat, stirring occasionally, until tender and browned, 5 to 7 minutes. Add the red wine and cook until reduced by three-fourths, about 4 minutes. Add the gravy.
  • Spoon the gravy over the Salisbury steak and serve right away.

You can use any brown gravy recipe here and use the reserved drippings in the skillet leftover from searing your Salisbury steak patties. This recipe is a good guide—sauté the mushrooms and then sprinkle with flour and proceed with the recipe as written. If you are looking for a shortcut, we like Williams-Sonoma’s jarred gravy base. Just add water.
