Pumpkin Hummus

This pumpkin hummus comes from Chef CJ Jacobson, a partner chef at Aba Restaurant in Austin. Aba is a Mediterranean restaurant with sister locations in Bal Harbour, FL and Chicago.

Ingredients
  

  • 2 cups garbanzo beans
  • ¼ cup water
  • 2 tbsp olive oil
  • ¼ tsp cinnamon
  • tsp nutmeg
  • ½ tsp ground cumin
  • 1 tsp brown sugar
  • 1 squeeze of lemon
  • 2 cups canned pumpkin
  • salt to taste
  • toasted pumpkin seeds
  • grated nutmeg

Instructions
 

  • Puree garbanzo beans in a blender with water, olive oil, spices, brown sugar, and lemon until smooth.
  • Pour garbanzo bean puree into a medium bowl.
  • Using a rubber spatula, mix canned pumpkin puree into garbanzo bean puree until completely incorporated.
  • Add salt and olive oil to taste.
  • Garnish with toasted pumpkin seeds and grated nutmeg.

Notes

This pumpkin hummus is available seasonally at Aba in Austin. If you’re visiting Austin in the fall, it usually makes its way onto Aba's menu by early October.
