Prosciutto-Wrapped Asaparagus

This is an excellent side dish to go with an Italian Christmas dinner. Round out the dinner with chicken saltimbocca and ricotta and honey crostini. It also be served as a salad course.

Ingredients
  

  • nonstick cooking spray
  • 1 bunch asparagus, about 1 lb
  • 3 Tbsp olive oil
  • 2 Tbsp freshly grated Parmesan cheese
  • ¼ lb prosciutto, cut in half lengthwise

Instructions
 

  • Preheat the oven to 400℉ and spray a baking sheet with nonstick cooking spray.
  • Wash the asparagus and remove the bottom, 1½ to 2 inches of the stalk.
  • Place the asparagus spears on the baking sheet and toss with the olive oil and Parmesan cheese until well coated.
  • Tightly wrap a half slice of the prosciutto around the bottom half of each asparagus spear.
  • Place wrapped asparagus spears on the baking sheet, prosciutto seam down.
  • Bake for 10 to 13 minutes and serve immediately.
