Choppy Bob Nachos and Signature Queso from Triple J Chophouse

Ingredients
  

  • ½ medium onion, diced 
  • 6 oz butter
  • 6 oz flour
  • ½ gallon milk
  • 1 pint heavy cream
  • 24 oz store-bought prepared queso cheese, diced
  • 2 tsp cumin
  • 4 tsp white pepper
  • 4 tsp kosher salt
  • wonton chips (store-bought)
  • smoked chopped brisket
  • shredded mozzarella
  • diced tomatoes
  • sliced black olives
  • sliced jalapenos
  • grated Parmesan cheese

Instructions
 

  • Add butter to sauté pan over medium heat and add onions; cook until translucent.
  • Add flour to thicken, then add milk and heavy cream. Turn heat down to low and stir frequently to avoid burning. Then add spices.
  • Remove pan from heat and add cheese until it has completely melted and has a creamy texture. Mix thoroughly.
  • Put desired amount of wonton chips on serving platter or plate.
  • Add smoked chopped brisket, shredded mozzarella, diced tomatoes, black olives, and sliced jalapenos.
  • Top with the queso while it’s still hot and sprinkle generously with grated Parmesan cheese. Enjoy!
