Cafe Blue’s Crab Stuffed Gulf Flounder

Austin’s Café Blue in Bee Cave is well known for their fresh and delicious seafood, and they have provided the recipe for their top seller, Crab Stuffed Flounder! This east coast classic is served with a delicious sauce filled with wine, butter, lemon, and fresh herbs. This decadent dish is sure to be a crowd-pleaser!

Ingredients
  

Sauce

  • 2 cups white wine
  • 1 cup cream
  • 3 Tablespoons butter
  • 1/2 a lemon
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/4 teaspoon Tarragon
  • 1/4 teaspoon Parsley
  • 1/4 teaspoon basil

Stuffing

  • 1 lb Lump Crab Meat
  • 1/2 cup Pico De Gallo
  • 1/4 cup garlic butter
  • 1/4 cup panko bread crumbs
  • 1-2 large flounder filets
  • 1 teaspoon lemon pepper
  • 1/2 cup all-purpose flour
  • 2 Tablespoons Vegetable oil

Instructions
 

  • Make the Sauce: Heat a small saucepot over medium heat, add the white wine and let it reduce by 75%. Reduce the heat to low, add the cream and let reduce by half.
  • Take the pot off heat and add the juice of half a lemon. Season with salt, pepper, tarragon, parsley, and basil and whisk in melted butter.
  • Make the Stuffing: In a medium bowl, add the crab, pico de gallo, garlic butter, and breadcrumbs. Mix until well combined.
  • Sautee Flounder: Preheat the oven to 350 degrees. Season the fish with lemon pepper on both sides. Lightly flour the filet on both sides.
  • In a large sauté pan, heat oil over moderately high heat. Add the flounder fillet and lightly brown the fish on one side, about 1 minute. Flip the fish and place the crab mixture on top of the browned side of the fish. Put the pan in the oven until cooked, about 4 to 5 minutes.
  • Use a spatula to transfer the flounder to a plate and spoon the delicious sauce over the top. Enjoy!
