Peli Peli's Caramel Malva Pudding

Ingredients
  

The Pudding

  • 1 large egg
  • 2 Tablespoons melted unsalted butter
  • 3 Tablespoons smooth apricot jam
  • 1 teaspoon baking soda
  • 1/2 cup brown sugar
  • 1 cup All-purpose flour
  • 1 pinch salt
  • 1 teaspoon vanilla extract
  • 1/2 cup whole milk

The Caramel Sauce

  • 1 cup dark brown sugar
  • 1 pinch salt
  • 1 Tablespoon smooth apricot jam
  • 1/2 cup unsalted butter cut into squares
  • 1 1/2 cup heavy cream

Toppings

  • Whipped cream or Vanilla bean ice cream

Instructions
 

The Pudding

  • Cream the butter and sugar together until butter is pale and soft
  • Beat in the apricot jam
  • Beat in the egg
  • Dissolve the Bicarb soda into the milk
  • Sift together the cake flour and salt and add to the batter alternately with the milk
  • Mix in the vanilla extract
  • Spoon the batter into an ovenproof bowl or individual ramekins that have been sprayed with non– stick spray
  • Pour half the caramel sauce over the batter
  • Bake the Malva pudding in a preheated oven at 350 degrees for 35 min or until risen and golden brown
  • Remove from the oven and pour remaining sauce a little at a time until all the sauce is absorbed
  • Serve with whipped cream or vanilla bean ice-cream

The Caramel Sauce

  • Place all the ingredients together in a medium saucepan
  • Bring the sauce to the boil, stirring continuously
  • Reduce the heat and simmer for two minutes
  • Remove from heat and keep warm
