Auberge du Soleil's Pecan Coffee Cake

From a recent trip to Napa Valley, I enjoyed a delicious Pecan Coffee Cake from Auberge du Soleil. I like it so much I got the recipe just for you!
Servings 1 8” round cake

Ingredients
  

Cake Batter

  • 2 oz unsalted butter
  • ¼ cup brown sugar
  • ¼ cup sugar
  • 1 egg
  • 1 tsp vanilla
  • 1 cup all-purpose flour
  • ½ tsp baking powder
  • ½ tsp baking soda
  • ¼ tsp salt
  • ½ cup buttermilk

Pecan Coffee Cake Streusel Topping

  • 1/8 cup sugar
  • 1/8 cup brown sugar
  • ¼ cup all-purpose flour
  • ¼ tsp ground ginger
  • ¼ tsp ground cinnamon
  • ¼ tsp ground nutmeg
  • 2 oz unsalted butter cold & cubed
  • 4 oz chopped pecans

Instructions
 

Cake Batter

  • Cream butter, brown sugar and sugar in a mixer with a paddle attachment on medium speed until fluffy & light in color
  • Add egg and vanilla to butter mixture, incorporate, scrape bowl
  • Sift together all purpose flour, baking powder, baking soda and salt. Add to butter and egg mixture
  • Incorporate buttermilk.

Pecan Coffee Cake Streusel Topping

  • Combine all ingredients. Mix with a paddle attachment on medium speed until it looks like loose gravel

Pecan Coffee Cake

  • Prepare 8” spring form pan, coating the inside with butter
  • Pour cake batter into the pan
  • Sprinkle with streusel topping
  • Bake at 375 degrees F for approximately 30 minutes or until a toothpick comes out cleanly when inserted into the middle.
