4ouncescooked red or Yukon Gold potatoesdiced small, with skins intact

Instructions
Briefly sweat onions and jalapenos, then add chorizo. Let the chorizo sear until it is nicely browned before you flip or stir. Cook chorizo until cooked through.
Then add precooked potatoes (see Notes) and saute for 2–2½ minutes, combining completely.
In a separate pan, cook the 2 eggs as desired. Gently lay eggs on top of chorizo hash.
Notes
We boiled the potatoes until just tender, but you can also saute with oil until golden brown.
