Chess Club Cafe's Chorizo Hash

Ingredients
  

  • 2 ounces caramelized onion
  • 5 ounces chorizo
  • 1/4 ounce diced jalapeno
  • 4 ounces cooked red or Yukon Gold potatoes diced small, with skins intact
  • 2 eggs
  • Salt and pepper to taste

Instructions
 

  • Briefly sweat onions and jalapenos, then add chorizo. Let the chorizo sear until it is nicely browned before you flip or stir. Cook chorizo until cooked through.
  • Then add precooked potatoes (see Notes) and saute for 2–2½ minutes, combining completely.
  • In a separate pan, cook the 2 eggs as desired. Gently lay eggs on top of chorizo hash.

Notes

We boiled the potatoes until just tender, but you can also saute with oil until golden brown.
