Orlando's Brown Rice 'n' Broccoli Chicken
New York-style Italian meets New Mexico spice at Orlando's Italian Restaurant, a beloved college town hot spot.

- 3/4 cup Uncooked brown rice
- 1/4 cup soy sauce
- 3/4 cup fresh broccoli florets
- 1 1/2 lb Chicken breasts, cooked, cut in 1/2 cubes
- 2 cups Mozzarella Cheese shredded
- 4 oz sliced almonds
- 1/4 tsp. Ground Black Pepper
- 1/4 tsp. Garlic Powder
- 1/8 tsp. ground nutmeg
- 1/3 cup Melted butter
- 8 oz Mozzarella cheese, shredded
- 2 tbsp red bell pepper Diced
Cook the rice according to package directions and substitute 1/4 cup Soy Sauce for part of water required. Set cooked rice aside.
Steam broccoli for 4 minutes and set aside.
Heat oven to 350 degrees.
Combine the cooked rice, chicken, broccoli, almonds, black pepper and nutmeg and divide into 6 greased Individual casserole dishes.
Top each with 1 tablespoon melted Butter and 1/3 cup mozzarella cheese .
Place casserole dishes on a baking tray and bake for 6 minutes or until Cheese is melted.
Garnish each with 1 teaspoon diced Red Bell Pepper and serve. Makes 6 servings
