Zenzero's: Pork Carnitas Burrito

Ingredients
  

  • 2 lbs boneless pork shoulder (2.5 lbs, bone in)
  • Salt and pepper
  • 2 tsp dried oregano
  • 1 tsp Cumin
  • 1 Tbsp. Vegetable oil
  • 1 red onion, chopped
  • 4 cloves garlic -- minced
  • 1 poblano pepper, seeded and chopped
  • 1 whole Orange peel on, cut in half

To assemble burrito

  • 4 oz cooked carnitas
  • 2 oz Pico De Gallo
  • 2 eggs
  • 4 oz Monterrey Jack cheese
  • 1 oz cheddar cheese
  • 1 large flour tortilla
  • 2 oz home potatoes, cooked (optional)

Instructions
 

  • On a grill, place a 4 oz portion of precooked carnitas and heat while constantly moving. Add in 2 oz pico de gallo for flavor. Add home potatoes. While moving carnitas, potatoes and pico on grill, crack both eggs into mixture. Continue mixing until eggs thoroughly cooked. Place mixture into a large tortilla with 1 oz of Monterrey jack cheese and roll until the burrito is closed on all sides. Once burrito is rolled, place in oven with remaining cheese on top until melted. Garnish with remaining pico de gallo. Serve with salsa if desired.
  • Continue mixing until eggs thoroughly cooked. Place mixture into a large tortilla with 1 oz of Monterrey jack cheese and roll until the burrito is closed on all sides.
  • Once burrito is rolled, place in oven with remaining cheese on top until melted. Garnish with remaining pico de gallo. Serve with salsa if desired.
