Tribeca 212's Gingerbread Waffles with Hot Chocolate Sauce

Gingerbread is not just for the holidays! This Gingerbread Waffle with Hot Chocolate Sauce recipe from Chef Rudy Souberbielle at Tribeca 212 in San Antonio is perfect for the Mom who loves a little chocolate first thing in the morning.

Ingredients
  

Gingerbread Waffles

  • 1 cup light molasses
  • 1/2 cup butter melted and slightly cooled
  • 1 1/2 teaspoons baking soda
  • 1/2 cup milk
  • 1 egg
  • 2/3 cups all-purpose flour
  • 1 1/2 teaspoons ground ginger
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon salt

Chocolate Syrup

  • 1 1/2 cups water
  • 1 1/2 cups of white sugar
  • 2 tablespoons cornstarch
  • 1 cup unsweetened cocoa powder
  • 1/2 teaspoon salt
  • 1 1/2 teaspoons vanilla extract
  • 2 tablespoons butter

Instructions
 

Waffles

  • Preheat waffle maker while preparing the batter.
  • Whisk flour, baking soda, salt, cinnamon and ginger. In a separate bowl, whisk egg, butter, milk, and molasses. Mix together wet and dry ingredients until just combined. The batter will be slightly lumpy.
  • Pour batter into greased waffle iron and bake according to the manufacturer's instructions. Serve with chocolate sauce and optional dusting of powdered sugar, fresh strawberry slices and a dollop of whipped topping.

Chocolate Syrup

  • Combine water, sugar, unsweetened cocoa powder, salt in saucepan over low heat. Whisk continuously until mixture thickens slightly. Add cornstarch and continue whisking. Remove from heat and stir vanilla and butter into sauce. Serve warm.
